Lunch Will Never be the Same

I'm not a cook.

I strive to be, but as documented in a national magazine I need a little help in that arena.

And preparing lunch is no exception.

Why? 

Well, the dilemma for me during this noontime nuttiness is I'm short on time {aren't we all}, and I don't want to make something too elaborate as I'm saving the big guns for dinner.

Which leads to something slapped between two slices of bread. Often peanut butter and jelly on white bread no less.


Not the healthiest.

So, when I was emailed by BuzzAgent about a new campaign for Brownberry Health-Full Bread I couldn't sign up fast enough.

This bread is great!

If you look at the label the health benefits are obvious. First of all it has 4 grams of protein, 4 grams of fiber and only 18 grams of carbs, and it's filled with healthy whole grains like flax seeds and oats.

But the BEST part is the kids ate it...like scarffed it down. I was worried with my picky eaters, but they loved it. I think because even though it's a whole wheat bread it's still soft. I think it's softer than the usual white bread we buy.

Now that I have this new bread in my lunchtime arsenal it's time to change out the usual PB&J and try something different.

Since EVERYONE and I mean EVERYONE has been raving about curry and putting it in everything I figured I'd try the Chicken Curry Salad recipe on the Health-Full Breads website.

Chicken Curry Salad Sandwich
Ingredients
2 slices Brownberry® Health-full® 10 Grain bread
1/4 cup cooked skinless chicken breast, cut into 1/2" cubes
1/6 medium celery stalk, cut into 1/4" thick slices (about 1/2 cup)
1/4 cup halved seedless red grapes
2 tablespoons non-fat Greek yogurt
2/3 teaspoon curry powder (or to taste)
1/12 teaspoon black pepper
2 leaves Arugula

Directions
In a large bowl, combine all ingredients until well-coated. Spread about 3/4 cup of chicken salad onto a slice of bread; top with a second slice of bread.



Serving size: 1 sandwich

277 calories
5g fiber
24g protein
42g carbs
5g fat

This was so yummy!

I loved all the flavors...although I might swap the celery out for something else, like apple, but we'll see.

Who knew bread could change your perspective on mealtime, but this truly does and it will now be a regular at our house.
